MOON and BACKは、日本の伝統的な食文化と現代の多様な食事スタイルを融合させ、食事を通じて世界中の人々をつなぐことを目指しています。
オーナーシェフ・福田竜也は、16歳から割烹料理の世界で修業を始め、その後、オーストラリア・シドニーで約7年間生活しながら、飲食業界で経験を積みました。シドニー・オペラハウス前のモダンジャパニーズレストランで料理長を務めたほか、韓国ではレストランの立ち上げやメニュー開発、プロデュースにも携わっています。
こうした海外経験を通じて、国籍、文化、宗教、ライフスタイル、アレルギーなどにより、お客様一人ひとりの食の選択肢が異なることを学びました。MOON and BACKでは、昆布、味噌、醤油など日本ならではの素材と調理技術を生かし、和牛、チキン、魚介料理に加え、ヴィーガン、ベジタリアン、グルテンフリー、ノーポーク、ハラルフレンドリーなど、さまざまなご希望に対応するメニューをご用意しています。
当店はヴィーガン専門店、グルテンフリー専門店、ハラル認証店ではなく、各店舗では共通の厨房や設備を使用しています。対応内容や交差接触の可能性は店舗・商品によって異なるため、食物アレルギーや食事制限があるお客様は、ご注文前にスタッフへお申し出ください。

Connecting with the World Through Food
MOON and BACK aims to connect people from around the world through food by combining traditional Japanese culinary culture with today’s diverse dietary preferences.
Owner-chef Tatsuya Fukuda began training in Japanese kappo cuisine at the age of 16. He later spent approximately seven years living and working in Sydney, Australia, where he gained extensive experience in the hospitality industry. He served as head chef at a modern Japanese restaurant near the Sydney Opera House and has also been involved in restaurant development, menu creation and culinary production in South Korea.
Through these international experiences, he learned that every guest has different food choices shaped by nationality, culture, religion, lifestyle or allergies. Using Japanese ingredients and techniques—including kombu, miso and soy sauce—MOON and BACK offers Japanese Wagyu, chicken and seafood dishes alongside vegan, vegetarian, gluten-free, no-pork and halal-friendly options.
We are not an exclusively vegan or gluten-free restaurant, and our restaurants are not halal-certified. Shared kitchens and equipment are used, and available accommodations and the risk of cross-contact vary by location and menu item. Guests with food allergies or dietary restrictions should inform our staff before ordering.
Our goal is to create places where guests with different dietary preferences can share the same table and enjoy Japanese food together. Guided by our philosophy, “Food for Everyone – No One Left Behind,” MOON and BACK continues to share an inclusive dining culture with people around the world.
